Here is Several Weeks of Wintertime Meals:

Don't fear Monday through Friday mealtimes -- savor them with these five quick and easy weeknight dinners.


The following are some great recipes:


  • Gnocchi Nicoise  This is just plain goodness. Store-bought potato pasta speeds up our Gnocchi Nicoise, and ground beef or turkey, veggies and Nicoise olives make a filling, flavorful sauce.
  • Turkey Carbonara Delux This makes a great and different pasta dish.
  • Chicken Tetrazzini This dish is wonderful and easy to make. It will soon be your family favorite too. Works great with leftover turkey too.
  • Bruschetta This is great served over breaded chicken. After cooking breaded chicken until golden brown you add this over the top with a some Italian cheese and you have a wonderful dish.
  • Slow-Cooker Moroccan Turkey Stew (You can use Chicken insted of Turkey)
  • Moroccan Burritos with Tahini Herb Sauce  When dinner is on deadlin, don't forget to look through your leftovers! Make a quick burrito with cooked rice, with the leftover Moroccan Stew
  • Pan-Fried Cod with Slaw Spice up everyday coleslaw with apples, scallions, whole-grain mustard and caraway seeds. Serve with this Crispy Pan-Fried Cod coks in minutes, and is the perfect accompaniment. Use just lowfat Mayonnaise to lighten it up
  • Sauteed Chicken Breasts With Cream Chive Sauce Dress up Chicken Breasts with a rich sour cream-based Sauce
  • Baked Mac and Cheese Here is a new twist this recipe has spinach and low-fat milk make this mac and cheese lighter and more nutrious than the usual recipe. I always like putting veggies in my main dish to make it more nutrious.

Healthy Tip of the Day: Don’t Go Hungry Research shows that smart snacking can keep energy levels up and prevent youf rom over eating at meal time. Combine a fruit or some veggies with a small amount of protein, such as a cube of low-fat cheese or a small handful of nuts.

I am hungry and this looks really good! Check out this video on how to make Huevos Rancheros. Huevos rancheros should be a satisfying, south-of-the-bordermeal of tortillas, eggs, and salsa—not a heaping plate of nachos. We wanted to use supermarket staples to produce the most authentic versionpossible. We began by roasting vegetables for the salsa. We then brushed ourtortillas with oil and crisped them in the oven to avoid the excess grease thatcomes from deep-frying. For the best possible flavor, we poached the eggsdirectly in the hot salsa. 100 Low Fat Recipes

Here is a link to some very good low fat recipes 100 Low Fat Recipes.

I have tried several recipes from this site and most of the are very good. Recipes that I tried are the following:


Three Bean Chili - This was good but my chili is better.Recipe posted on this website.

Oven Fried Chicken - This recipe was good but a little bland. I normally do not use sesame seeds in my recipe which added a nice touch. I normally use 1/2 tsp Paprika and fresh ground black pepper in my recipe.

Italian Lemonade - Very good, I wouldn't change a think but maybe add some vodka.




Check back and I will post more info on recipes that I try. I want to try the Salmon with Lemon, Capers, and Rosemary. If you try any please post your comments on my website.Thank you for your support and taking the time to write a comment on my website.

1,000-Calorie Meals... Are YOU Ordering Them?

I had to post this link. Can you beleive how many calories and fat people are eating! Wow! I don't see anything wrong with once in a while eating like this, but I know people that eat like this all the time. That might be why they hire me to be their Chef to teach them how to eat healthier and still enjoy food and how it taste. You don't need all the fat for the food to taste good. Actually my clients say they like my food better and feel better after eating it. What do you think? Are you ordering any ot these?
