 Summer Barbecue

Barbecue season has arrived and it’s a great time to add a little spice to your life. For father’s day try this great recipe. It is earthy, warm and a little spicy and often used in chilies, soups and typical Mexican fare. However, cumin is delicious mixed with some salt and pepper and oregano and used as a quick rub on chicken, steak, fish or pork. Here is a tasty rub that works on just about any grilled meat - rub on just prior to grilling or an hour or two prior and refrigerate. It also keeps in a sealed container at room temperature for a few weeks if you have any leftover:

 

Barbecue Dry Rub

  • 1 tablespoon cumin
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon chili powder
  • 1 tablespoon brown sugar
  • 2 tablespoons kosher salt
  • 1 teaspoon cayenne pepper
  • 1 teaspoon black pepper
  • 1 teaspoon white pepper
  • 1 teaspoon dried thyme

Combine all ingredients thoroughly and store in an airtight jar or container.

 

BBQ Sauce

  • 4 tablespoons hot sauce
  • 2 tablespoons honey
  • 2 cup ketchup

·         1/4 cup brown sugar

·         1 tablespoons white vinegar

·         1 tablespoon Worcestershire Sauce

·         1 small onion minced

·         2 teaspoons minced garlic

·         2 teaspoons dry mustard

·         2 tablespoons paprika

·         Salt and fresh cracked black pepper

Combine all above in a sauce pot and cook on medium heat stirring contentiously for 10 minutes BBQ Macaroni Salad
